Erewhon Kale and White Bean Salad

The Erewhon kale and white bean salad is a perfect companion to Chinese Mahjong — fresh, grounding, and nourishing without being heavy. Its bright flavors and satisfying texture keep you energized and focused through long stretches of play, making it ideal for sharing between hands. Just like Mahjong, it’s simple, balanced, and best enjoyed slowly, in good company around the table.
For the Salad
1 bunch curly kale
1 avocado, diced
1 (15-oz) can white beans, drained and rinsed
⅓ cup hemp hearts
⅓ cup sunflower seeds
⅓ cup pumpkin seeds (pepitas)
For the Dressing
⅓ cup olive oil
¼ cup fresh lemon juice (about 1–2 lemons)
1–2 tablespoons maple syrup, to taste
2 teaspoons Dijon mustard
2 cloves garlic, mashed
Sea salt & black pepper, to taste
Instructions
Wash and thoroughly dry the kale. Chop into small pieces and place in a large bowl.
Sprinkle a pinch of sea salt over the kale and massage it with your hands until softened.
Dice the avocado and add it to the bowl.
Add the drained white beans, hemp hearts, sunflower seeds, and pumpkin seeds. Set aside.
In a small bowl, whisk together all dressing ingredients until well combined.
Pour the dressing over the salad, toss gently, and enjoy!
